Ingredients for the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (yields 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

For the Cordial: Put the listed components inside a pan, bring to a light boil, agitating so the sugar melts. Then, take off the heat and leave to cool down entirely. Transfer into a clean bottle, cap it and store in the refrigerator, it will last for up to four weeks.

Preparing the Batch Mix: Combine every liquids into one sizeable container, leave to sit for one hour, then strain best through a fine cloth, so it's fully clarified.

For serving: Measure 85ml of the batch mix to a stirring glass containing ice, and stir lightly for a minute to cool it down. Pour into a frosted cocktail glass or similar, decorate with some cranberries and finish using a light spray of the essential oil over the drink.
